- 2 large eggs
- 1 cup diced potatoes
- 1/2 cup diced bell pepper
- 1/4 cup diced onion
- 1 cup cooked sausage or turkey bacon
- 1/2 cup shredded cheese
- Salt and pepper to taste
- Olive oil or butter for cooking
Instructions
- Heat a splash of olive oil or a pat of butter in a skillet over medium heat.
- Add the diced potatoes and cook until they’re golden and tender, about 10–12 minutes.
- Toss in the diced onion and bell pepper, cooking until softened and fragrant, around 3–4 minutes.
- Stir in the cooked sausage or turkey bacon for an additional 2 minutes.
- Make two wells in the mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are set to your liking, about 3–5 minutes.
- Sprinkle with shredded cheese and season with salt and pepper before serving.
