Description

A hearty and comforting breakfast skillet featuring potatoes, eggs, and sausage, perfect for cozy mornings.


Ingredients

Scale
  • 2 large eggs
  • 1 cup diced potatoes
  • 1/2 cup diced bell pepper
  • 1/4 cup diced onion
  • 1 cup cooked sausage or turkey bacon
  • 1/2 cup shredded cheese
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Instructions

  1. Heat a splash of olive oil or a pat of butter in a skillet over medium heat.
  2. Add the diced potatoes and cook until they’re golden and tender, about 10–12 minutes.
  3. Toss in the diced onion and bell pepper, cooking until softened and fragrant, around 3–4 minutes.
  4. Stir in the cooked sausage or turkey bacon for an additional 2 minutes.
  5. Make two wells in the mixture and crack an egg into each well.
  6. Cover the skillet and cook until the eggs are set to your liking, about 3–5 minutes.
  7. Sprinkle with shredded cheese and season with salt and pepper before serving.
