- 1 cup + 2 tablespoons all-purpose flour
- 1 teaspoon cornstarch
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 4 tablespoons unsalted butter (softened, at room temperature)
- 1/2 cup plus 2 tablespoons granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 10 Oreo or chocolate sandwich cookies (coarsely chopped)
- 1/2 cup white chocolate chips
Instructions
- Preheat your oven to 350 degrees F. Line your baking sheets with parchment paper or silicone baking mats. Set aside.
- Whisk together the flour, cornstarch, baking powder, baking soda, and salt. Set aside.
- Beat together the softened butter and granulated sugar on medium speed until well combined and fluffy.
- Add in the large egg and vanilla extract. Mix until the batter is smooth with no lumps.
- Reduce the mixer speed to low and slowly incorporate the dry ingredients into the wet mixture. Mix until just combined.
- Fold in the coarsely chopped Oreos and white chocolate chips until evenly distributed.
- Scoop the dough onto your prepared baking sheets using a small cookie scoop (about 2 tablespoons), lightly pressing down each mound.
- Bake for 8-10 minutes or until the edges are set but the center looks slightly underbaked.
- Cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
