- 4 large bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 cup shredded cheese (mozzarella or cheddar)
- 1 can diced tomatoes (14.5 oz)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds. Set them aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant.
- Add ground beef to the skillet and cook until browned. Drain any excess fat.
- Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for a few more minutes until heated through.
- Fill each bell pepper with the savory beef and rice mixture, then generously top with shredded cheese.
- Place the stuffed peppers in a baking dish and add a little water to the bottom to help steam them.
- Cover the dish with foil and bake for 30 minutes.
- Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and the peppers are tender.
