Description

These Cozy Classic Stuffed Peppers are filled with a savory mixture of ground beef, rice, and spices, topped with gooey cheese, embodying the essence of comfort food.


Ingredients

  • 4 large bell peppers (any color)
  • 1 pound ground beef
  • 1 cup cooked rice
  • 1 cup shredded cheese (mozzarella or cheddar)
  • 1 can diced tomatoes (14.5 oz)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds. Set them aside.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft and fragrant.
  4. Add ground beef to the skillet and cook until browned. Drain any excess fat.
  5. Stir in the cooked rice, diced tomatoes, Italian seasoning, salt, and pepper. Cook for a few more minutes until heated through.
  6. Fill each bell pepper with the savory beef and rice mixture, then generously top with shredded cheese.
  7. Place the stuffed peppers in a baking dish and add a little water to the bottom to help steam them.
  8. Cover the dish with foil and bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and the peppers are tender.
  10. Serve warm, and enjoy the embrace of this cozy meal!

Notes

Prepare the filling in advance and store it in the fridge. Swap ground beef for turkey or chicken for a lighter meal.
