Description

This Cinnamon Apple Cake is tender, moist, and packed with sweet, spiced goodness, making it an ideal dessert for any cozy gathering.


Ingredients

  • 2 apples, peeled and diced
  • 45g granulated sugar
  • 1 tsp cinnamon
  • 360g plain flour
  • 200g granulated sugar
  • 4 tsp baking powder
  • 300ml whole milk
  • 1 tsp vanilla
  • 2 large eggs, lightly beaten
  • 110g unsalted butter, melted
  • 120g unsalted butter, melted (for cinnamon swirl)
  • 150g light brown sugar
  • 2 tbsp cinnamon (for cinnamon swirl)
  • 200g icing sugar (for glaze)
  • 40ml milk (for glaze)

Instructions

  1. Preheat the oven to 170C (fan). Grease an 8×10” tin.
  2. Combine the diced apples with 45g granulated sugar and 1 tsp cinnamon in a bowl. Set aside.
  3. Whisk together the plain flour, 200g granulated sugar, and baking powder in another bowl.
  4. Mix the milk, vanilla, and eggs in a separate bowl. Gradually add the wet mixture to the dry ingredients, stirring until just combined. Fold in the melted butter gently.
  5. Pour half of the cake batter into the prepared tin, smoothing it out to create an even base.
  6. Spread the apple mixture evenly over this layer of batter, allowing the sweet apples to melt into the cake as it bakes.
  7. Mix the melted butter, light brown sugar, and 2 tbsp cinnamon in a small bowl. Drizzle this aromatic swirl mixture over the apples.
  8. Pour the remaining batter over the apple and cinnamon layer, encapsulating the good stuff in a delicious embrace.
  9. Bake in the preheated oven for 40-45 minutes, or until a skewer inserted in the center comes out clean.
  10. Whisk together the icing sugar and 40ml milk until smooth and pourable for the glaze.
  11. Drizzle the glaze over the cooled cake and serve warm for a delightful finish.

You can prepare the batter in advance and store it in the refrigerator for up to 24 hours before baking.
