Description

A vibrant grilled chicken dish infused with smoky chipotle and topped with fresh mango salsa, perfect for weeknight dinners.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons chipotle in adobo sauce
  • Juice of 2 limes
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • 1 ripe mango, diced
  • 1/4 red onion, finely chopped
  • 1 jalapeño, seeded and minced
  • 1/4 cup chopped cilantro
  • Juice of 1 lime

Instructions

  1. Mix the chipotle in adobo, lime juice, olive oil, salt, and pepper in a bowl. Marinate the chicken in this mixture for at least 30 minutes.
  2. Preheat your grill to medium-high heat.
  3. Grill the marinated chicken for about 6-7 minutes on each side or until cooked through and juices run clear.
  4. Prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and juice of 1 lime in a bowl.
  5. Serve the grilled chicken topped with mango salsa, over rice, or in tacos.

Notes

Marinate chicken ahead of time for enhanced flavor. Leftovers store well in an airtight container.
