Ingredients

- 4 boneless, skinless chicken breasts
- 2 tablespoons chipotle in adobo sauce
- Juice of 2 limes
- Salt and pepper to taste
- 1 tablespoon olive oil
- 1 ripe mango, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and minced
- 1/4 cup chopped cilantro
- Juice of 1 lime
Instructions
- Mix the chipotle in adobo, lime juice, olive oil, salt, and pepper in a bowl. Marinate the chicken in this mixture for at least 30 minutes.
- Preheat your grill to medium-high heat.
- Grill the marinated chicken for about 6-7 minutes on each side or until cooked through and juices run clear.
- Prepare the mango salsa by combining diced mango, red onion, jalapeño, cilantro, and juice of 1 lime in a bowl.
- Serve the grilled chicken topped with mango salsa, over rice, or in tacos.
Notes
