Description

A comforting dish of crispy chicken thighs coated in a tangy lemon sauce, reminiscent of family gatherings and homestyle cooking.


Ingredients

Scale
  • 1 lb chicken thighs, cut into cubes
  • 1 tbsp soy sauce
  • 2 tbsp cornstarch (plus 2 tsp for the sauce)
  • 1/3 c lemon juice
  • 3 tbsp sugar
  • 1/2 c water
  • 1 tsp lemon zest
  • 1/4 c flour
  • 1/2 c cornstarch (for coating)
  • Oil for frying

Instructions

  1. Combine the cubed chicken thighs with soy sauce and cornstarch. Cover and let marinate for 30 minutes.
  2. Whisk together lemon juice, sugar, water, cornstarch, and lemon zest in a bowl. Set aside.
  3. Mix in flour and cornstarch to the marinated chicken until well coated.
  4. Heat oil in a pot to about 350 degrees over medium-high heat.
  5. Add the chicken in batches, ensuring not to overcrowd the pot.
  6. Fry the chicken until golden brown, about 4-5 minutes. Transfer to a skillet.
  7. Pour the lemon sauce into the skillet over the fried chicken.
  8. Toss the chicken in the sauce until it thickens up.
  9. Serve immediately with steamed rice and vegetables.

Notes

Marinate chicken a day in advance for extra flavor. Leftovers can be stored in the fridge for up to three days.
