Ingredients

- 1 lb chicken thighs, cut into cubes
- 1 tbsp soy sauce
- 2 tbsp cornstarch (plus 2 tsp for the sauce)
- 1/3 c lemon juice
- 3 tbsp sugar
- 1/2 c water
- 1 tsp lemon zest
- 1/4 c flour
- 1/2 c cornstarch (for coating)
- Oil for frying
Instructions
- Combine the cubed chicken thighs with soy sauce and cornstarch. Cover and let marinate for 30 minutes.
- Whisk together lemon juice, sugar, water, cornstarch, and lemon zest in a bowl. Set aside.
- Mix in flour and cornstarch to the marinated chicken until well coated.
- Heat oil in a pot to about 350 degrees over medium-high heat.
- Add the chicken in batches, ensuring not to overcrowd the pot.
- Fry the chicken until golden brown, about 4-5 minutes. Transfer to a skillet.
- Pour the lemon sauce into the skillet over the fried chicken.
- Toss the chicken in the sauce until it thickens up.
- Serve immediately with steamed rice and vegetables.
Notes
Marinate chicken a day in advance for extra flavor. Leftovers can be stored in the fridge for up to three days.
