- 1 inch ginger, grated
- 1 can coconut milk
- 1 can diced tomatoes
- 2 tablespoons tikka masala curry powder
- 1 teaspoon cumin
- Salt to taste
- Fresh cilantro for garnish
Instructions
- Sauté onions, garlic, and ginger in a large pan until fragrant, about 3-4 minutes.
- Add the tikka masala curry powder and cumin, stirring for another minute.
- Pour in the diced tomatoes and coconut milk, bringing to a gentle simmer.
- Add the chickpeas and simmer for 15-20 minutes until the sauce thickens.
- Season with salt to taste and garnish with fresh cilantro before serving.
