- 5 bell peppers (any color)
- 2 cups cooked shredded chicken
- 1 cup cooked rice
- 1 cup salsa
- 1 cup shredded cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- Mix together the cooked chicken, rice, salsa, and half of the cheese in a large bowl.
- Stuff the mixture into each bell pepper, pressing it down lightly.
- Place the stuffed peppers in a baking dish and sprinkle the remaining cheese on top.
- Bake for 25-30 minutes, or until the peppers are tender and the cheese is bubbly.
Notes
Make ahead by preparing the filling the night before. Store baked stuffed peppers in an airtight container for up to 3 days.
