Ingredients

  • 2 chicken breasts
  • 8 corn tortillas
  • 1/2 onion, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 lime, cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon cumin
  • Salt and pepper, to taste

Instructions

  1. Combine the chicken breasts with olive oil, garlic powder, cumin, salt, and pepper; coat well and marinate for at least 15 minutes.
  2. Preheat your grill and grill the marinated chicken for about 6-7 minutes on each side or until cooked through.
  3. Warm the corn tortillas on a grill or skillet for about 30 seconds on each side until pliable.
  4. Slice the grilled chicken into strips and place in the warm tortillas.
  5. Top with diced onion, fresh cilantro, and a squeeze of lime before serving.
