Instructions
- Preheat your oven to 350°F (175°C).
- Combine the peanut butter, almond flour, sugar, brown sugar, baking soda, and salt in a mixing bowl.
- Add the egg and vanilla extract, stirring until smooth.
- Scoop the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Flatten each cookie slightly with a fork.
- Bake for 10-12 minutes or until the edges are golden.
- Allow cooling on the baking sheet before transferring to a wire rack.
