Ingredients

  • 1 cup almond flour
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine the peanut butter, almond flour, sugar, brown sugar, baking soda, and salt in a mixing bowl.
  3. Add the egg and vanilla extract, stirring until smooth.
  4. Scoop the dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
  5. Flatten each cookie slightly with a fork.
  6. Bake for 10-12 minutes or until the edges are golden.
  7. Allow cooling on the baking sheet before transferring to a wire rack.
