- 2 cups cooked rice
- 1 cup mozzarella cheese, cubed
- 1/2 cup ham, diced
- 1/2 cup sweet peas
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
- Salt and pepper to taste
Instructions
- Combine the cooked rice, mozzarella cheese, ham, peas, salt, and pepper in a large bowl. Mix well until everything is evenly coated.
- Take a small portion of the mixture and form it into a ball around a piece of mozzarella cheese.
- Repeat with the remaining mixture, creating little rice balls filled with cheesy goodness.
- Dredge each ball in flour, dip into the beaten eggs, and coat with breadcrumbs.
- Heat oil in a deep pan over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes.
- Remove from oil and drain on paper towels. Serve hot and enjoy!

For variations, try adding spinach and feta, sautéed mushrooms, or spicy sausage.
