Description

Delicious, crispy Cheesy Rice Balls with a melty mozzarella core, perfect for a cozy dinner or appetizer.


Ingredients

Scale
  • 2 cups cooked rice
  • 1 cup mozzarella cheese, cubed
  • 1/2 cup ham, diced
  • 1/2 cup sweet peas
  • 1/2 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup breadcrumbs
  • Oil for frying
  • Salt and pepper to taste

Instructions

  1. Combine the cooked rice, mozzarella cheese, ham, peas, salt, and pepper in a large bowl. Mix well until everything is evenly coated.
  2. Take a small portion of the mixture and form it into a ball around a piece of mozzarella cheese.
  3. Repeat with the remaining mixture, creating little rice balls filled with cheesy goodness.
  4. Dredge each ball in flour, dip into the beaten eggs, and coat with breadcrumbs.
  5. Heat oil in a deep pan over medium heat. Fry the rice balls in batches until golden brown and crispy, about 3-4 minutes.
  6. Remove from oil and drain on paper towels. Serve hot and enjoy!

Notes

For variations, try adding spinach and feta, sautéed mushrooms, or spicy sausage.
