Description
A delightful quickbread infused with roasted butternut squash and topped with a crunchy brown sugar pecan topping, perfect for fall.

- 1 medium butternut squash (about 2 cups, cooked and mashed)
- 1/2 cup unsalted butter, softened
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon salt
- 1 cup chopped pecans (for topping)
- 1/4 cup brown sugar (for topping)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half, scoop out the seeds, and place it cut-side down on a baking sheet.
- Roast for about 30-40 minutes, or until fork-tender.
- Allow it to cool, then scoop out the flesh and mash until smooth.
- Cream the softened butter with brown sugar and granulated sugar until fluffy.
- Add in the eggs, one at a time, mixing well after each addition.
- Stir in the vanilla extract followed by the mashed butternut squash.
- Whisk together the flour, baking soda, baking powder, ground cinnamon, ground nutmeg, and salt in another bowl until well blended.
- Gradually add the dry ingredients to the butternut squash mixture, stirring just until incorporated.
- Combine the chopped pecans with brown sugar in a small bowl and set aside.
- Pour the batter into a greased 9×5-inch loaf pan.
- Sprinkle the brown sugar pecan topping evenly over the batter.
- Bake in the preheated oven for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
Notes
For a delicious twist, try drizzling maple glaze or adding chocolate chips.
