- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda

- 1 cup pistachios, chopped
- 1 cup chocolate chips
- 1/2 cup pistachio cream
Instructions
- Preheat the oven to 350°F (175°C).
- Melt the butter in a saucepan over medium heat, stirring until golden brown.
- Combine the brown butter, brown sugar, and granulated sugar in a large bowl until smooth.
- Add the egg and vanilla extract, mixing well.
- Whisk together the flour, baking soda, and salt in another bowl. Gradually add to the wet mixture.
- Fold in the chopped pistachios and chocolate chips.
- Scoop tablespoon-sized amounts onto a baking sheet lined with parchment paper.
- Make a small dip in the center of each cookie and fill with pistachio cream.
- Bake for 10-12 minutes until golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
- Drizzle or swirl additional pistachio cream on top before serving.
