Description

These cookies combine the nutty flavor of brown butter with crunchy pistachios and melty chocolate chips for a comforting, indulgent treat.


Ingredients

  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup pistachios, chopped
  • 1 cup chocolate chips
  • 1/2 cup pistachio cream

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Melt the butter in a saucepan over medium heat, stirring until golden brown.
  3. Combine the brown butter, brown sugar, and granulated sugar in a large bowl until smooth.
  4. Add the egg and vanilla extract, mixing well.
  5. Whisk together the flour, baking soda, and salt in another bowl. Gradually add to the wet mixture.
  6. Fold in the chopped pistachios and chocolate chips.
  7. Scoop tablespoon-sized amounts onto a baking sheet lined with parchment paper.
  8. Make a small dip in the center of each cookie and fill with pistachio cream.
  9. Bake for 10-12 minutes until golden.
  10. Let cool on the baking sheet for a few minutes before transferring to a wire rack.
  11. Drizzle or swirl additional pistachio cream on top before serving.
