Description

A comforting dish of creamy cheese sauce enveloping tender broccoli and perfectly cooked pasta, perfect for weeknight dinners.


Ingredients

  • 1 pound pasta (gluten-free for gluten-free)
  • 3 tablespoons butter
  • 1/2 cup onion, diced
  • 2 cloves garlic, chopped
  • 3 tablespoons all-purpose flour (rice flour for gluten-free)
  • 2 cups milk
  • 1/2 teaspoon ground mustard
  • 2 cups sharp cheddar cheese, shredded
  • 1/4 cup parmigiano reggiano, grated (optional)
  • Salt and pepper to taste
  • 2 cups broccoli, chopped

Instructions

  1. Start by cooking the pasta according to the package directions with a pinch of salt.
  2. Meanwhile, melt the butter in a large saucepan over medium heat.
  3. Add the diced onion and cook until tender, about 5-7 minutes.
  4. Stir in the garlic, then the flour, and cook for 1 minute.
  5. Pour in the milk and bring to a gentle simmer, stirring until thickened, about 2-3 minutes.
  6. Reduce the heat and slowly add the shredded cheddar, stirring until melted.
  7. Add the chopped broccoli and cook until tender, about 2-3 minutes.
  8. Once the broccoli is tender, add the cooked pasta and stir to coat.
  9. Serve immediately and enjoy!

Notes
