- 3 tablespoons butter
- 1/2 cup onion, diced
- 2 cloves garlic, chopped
- 3 tablespoons all-purpose flour (rice flour for gluten-free)
- 2 cups milk
- 1/2 teaspoon ground mustard
- 2 cups sharp cheddar cheese, shredded
- 1/4 cup parmigiano reggiano, grated (optional)
- Salt and pepper to taste
- 2 cups broccoli, chopped
Instructions
- Start by cooking the pasta according to the package directions with a pinch of salt.
- Meanwhile, melt the butter in a large saucepan over medium heat.
- Add the diced onion and cook until tender, about 5-7 minutes.
- Stir in the garlic, then the flour, and cook for 1 minute.
- Pour in the milk and bring to a gentle simmer, stirring until thickened, about 2-3 minutes.
- Reduce the heat and slowly add the shredded cheddar, stirring until melted.
- Add the chopped broccoli and cook until tender, about 2-3 minutes.
- Once the broccoli is tender, add the cooked pasta and stir to coat.
- Serve immediately and enjoy!
