- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 1 cup fresh blueberries
- 1/4 cup water
- 1/4 cup sugar (for blueberry sauce)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the graham cracker crumbs and melted butter in a medium bowl. Press the mixture into the bottom of a greased 9×13 inch pan, creating a firm crust.
- Beat the cream cheese, granulated sugar, and vanilla in a large mixing bowl until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition.
- Cook the blueberries, water, and 1/4 cup sugar in a small saucepan over medium heat until the blueberries burst and the mixture thickens, about 5-7 minutes.
- Pour the cream cheese mixture over the crust and carefully swirl in the blueberry sauce.
- Bake for 30-35 minutes or until set, then allow to cool slightly.
- Refrigerate for at least 2 hours before cutting into bars.
Notes
These bars can be made a day in advance for even better flavor. Store leftovers in an airtight container in the refrigerator for up to a week.
