Description

Cozy Blueberry Cottage Cheese Muffins that are tender, rich, and perfect for breakfast or a snack.


Ingredients

  • 1 cup cottage cheese
  • 1 cup fresh blueberries
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 cup melted butter or oil

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick spray.
  2. In a large bowl, mix together the cottage cheese, eggs, honey or maple syrup, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking powder, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Fold in the blueberries and melted butter or oil, creating a colorful, speckled batter.
  6. Divide the batter evenly among the muffin cups, filling each about two-thirds full.
  7. Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
  8. Let the muffins cool in the pan for 5 minutes, then transfer them to a wire rack to cool completely.

Notes

These muffins can be frozen for up to a month and stored for three days in an airtight container at room temperature.
