Description

A flavorful and easy weeknight dinner of marinated chicken breasts grilled to perfection and served with sweet grilled pineapple.


Ingredients

  • 4 chicken breasts
  • 1 cup pineapple chunks (fresh or canned)
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger (grated)
  • Salt and pepper to taste
  • Green onions (for garnish)

Instructions

  1. Preheat the Blackstone grill to medium-high heat.
  2. Mix together the soy sauce, honey, olive oil, garlic powder, ginger, salt, and pepper until combined.
  3. Add the chicken breasts to the marinade and let them sit for at least 15 minutes.
  4. Place the marinated chicken on the grill and cook for 6-8 minutes on each side or until fully cooked.
  5. Add the pineapple chunks to the grill during the last few minutes of cooking.
  6. Serve the chicken topped with grilled pineapple and garnished with green onions.

Notes

Marinate the chicken overnight for enhanced flavors or substitute chicken with tofu or shrimp for variations.
