Description

These Blackstone Hot Honey BBQ Chicken Quesadillas combine tender chicken, gooey cheese, and a perfect blend of hot honey and BBQ sauce for a cozy meal.


Ingredients

  • Cooking oil of choice
  • 1 pound boneless, skinless chicken thighs
  • Kosher salt
  • Pepper
  • BBQ seasoning blend
  • 3 tablespoons BBQ sauce (plus more to drizzle)
  • 2 tablespoons hot honey (plus more to drizzle)
  • 4 large burrito-size flour tortillas
  • 3 cups shredded cheese of choice
  • 1/2 cup chopped cilantro (optional)
  • Optional toppings: sour cream, jalapeños

Instructions

  1. Preheat your griddle to medium heat. Add a splash of cooking oil, then toss in the chicken, seasoning with kosher salt, pepper, and BBQ seasoning. Sauté for about 6 minutes, mixing a few times with your spatula until the chicken is browned and cooked through.
  2. Once the chicken is cooked, add in the BBQ sauce and hot honey. Continue to cook for another 2 minutes, stirring to combine everything well. When it’s fragrant and sticky, remove the mixture from the griddle and set it aside.
  3. Lower the heat to medium-low and add another drizzle of cooking oil to the griddle. Carefully lay the tortillas flat on the griddle, allowing them to warm slightly.
  4. Sprinkle half of the cheese on one side of each tortilla. Load the chicken mixture on top, and don’t be shy with that extra drizzle of BBQ sauce and hot honey. If you’re using cilantro, sprinkle that over the chicken, followed by the remaining cheese.
  5. Fold the empty side of each tortilla over the filled side. Gently cook the quesadillas for a minute or two on each side, or until they are golden brown and the cheese is melted to perfection.
  6. Once cooked to your liking, remove the quesadillas from the griddle and slice them into wedges. Serve warm with optional toppings like sour cream and jalapeños for an extra kick!

Notes

These quesadillas can be made ahead by cooking the chicken mixture in advance. Store leftovers in an airtight container in the fridge for up to 3 days.
