- 2 pounds red potatoes
- 4 tablespoons olive oil
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon butter
Instructions
- Preheat the oven to 450°F (230°C).
- Boil the red potatoes in salted water until fork-tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Drizzle olive oil evenly on a baking sheet.
- Place the potatoes on the sheet and gently smash them with a fork or potato masher until flattened but still intact.
- Brush the smashed potatoes with more olive oil and sprinkle with garlic powder, salt, pepper, rosemary, thyme, and parsley to taste.
- Dot each potato with butter for extra richness.
- Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.
- Serve warm and watch them disappear!
