Description

Crispy on the outside and soft on the inside, these smashed red potatoes are seasoned with fresh herbs and olive oil for a delightful side dish that brings comfort and warmth.


Ingredients

  • 2 pounds red potatoes
  • 4 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 450°F (230°C).
  2. Boil the red potatoes in salted water until fork-tender, about 15-20 minutes.
  3. Drain the potatoes and let them cool slightly.
  4. Drizzle olive oil evenly on a baking sheet.
  5. Place the potatoes on the sheet and gently smash them with a fork or potato masher until flattened but still intact.
  6. Brush the smashed potatoes with more olive oil and sprinkle with garlic powder, salt, pepper, rosemary, thyme, and parsley to taste.
  7. Dot each potato with butter for extra richness.
  8. Bake in the preheated oven for 20-25 minutes, or until crispy and golden brown.
  9. Serve warm and watch them disappear!

Notes

For extra flavor, consider adding cheese or lemon zest before baking. Leftovers can be stored for up to 3 days in the fridge.
