Description

A cozy and healthier twist on the classic macaroni and cheese, using roasted cauliflower and a blend of delicious cheeses for a creamy finish.


Ingredients

  • 1 head cauliflower, cut into small bite-size pieces
  • 2 Tbsp. olive oil
  • 1/4 tsp. freshly ground black pepper
  • 1/2 tsp. salt
  • 1 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1 1/2 cup heavy whipping cream
  • 4 ounces cream cheese, cut into small cubes
  • 1 cup shredded cheddar cheese
  • 1 cup gruyere cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 tsp. paprika (optional)

Instructions

  1. Preheat your oven to 425 degrees F.
  2. Place the cauliflower pieces on a baking sheet lined with foil or parchment paper. Drizzle with olive oil, salt, and black pepper, then toss until well coated.
  3. Roast the cauliflower in the oven for 15-20 minutes, or until it’s tender.
  4. In a large pot over low heat, pour in the heavy cream and add the cream cheese. Whisk until melted.
  5. Gradually add in the shredded cheeses, whisking continuously until melted into a creamy sauce.
  6. Stir in the garlic powder, onion powder, and paprika (if using) for added flavor.
  7. Remove from heat and give it a whisk to keep things fluffy.
  8. Fold in the roasted cauliflower, making sure each piece is coated.
  9. Serve immediately, and sprinkle paprika on top if desired.
