Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups cooked chicken, shredded
  • 1/2 cup BBQ sauce
  • 1 medium red onion, diced
  • 1 cup corn (canned or frozen)
  • 1 cup cheddar cheese, shredded
  • 1 tablespoon olive oil
  • Salt, to taste
  • Black pepper, to taste
  • 1 teaspoon smoked paprika
  • 2 green onions, sliced (for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the cubed sweet potatoes and season with salt, pepper, and smoked paprika. Cook, stirring occasionally, until the sweet potatoes are tender and golden, about 12-15 minutes.
  2. Add the diced red onion and corn. Sauté for another 5 minutes, or until the onion is softened and fragrant.
  3. Stir in the shredded chicken and BBQ sauce, mixing until everything is well combined and heated through.
  4. Remove the skillet from the heat and top with the cheddar cheese, allowing it to melt slightly.
  5. Serve hot, garnished with sliced green onions for an extra pop of flavor.

Notes

This dish can be made ahead by prepping the sweet potatoes and chicken in advance. Leftovers store well in an airtight container for up to 3 days.
