Description

Ingredients

  • 2 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, cold and cubed
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 cup brown sugar for glaze

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Mix together the flour, sugar, baking powder, salt, and ground cinnamon in a large bowl.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the mashed bananas, milk, and vanilla extract until just combined.
  5. Turn the dough out onto a floured surface and knead gently, then pat into a circle about 1 inch thick.
  6. Cut into wedges and place them on the prepared baking sheet.
  7. Bake for 15-20 minutes or until golden brown.
  8. Mix the brown sugar with a little water until smooth and drizzle over the warm scones for glaze.
  9. Allow the scones to cool slightly before serving.
