- 2 ripe bananas, mashed
- 2 cups all-purpose flour
- 1/2 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter, cold and cubed
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/4 cup brown sugar for glaze
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Mix together the flour, sugar, baking powder, salt, and ground cinnamon in a large bowl.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Stir in the mashed bananas, milk, and vanilla extract until just combined.
- Turn the dough out onto a floured surface and knead gently, then pat into a circle about 1 inch thick.
- Cut into wedges and place them on the prepared baking sheet.
- Bake for 15-20 minutes or until golden brown.
- Mix the brown sugar with a little water until smooth and drizzle over the warm scones for glaze.
- Allow the scones to cool slightly before serving.
