Description

A cozy dinner of marinated flank steak with grilled zucchini and creamy whipped feta, perfect for weeknight meals or entertaining.


Ingredients

  • 1 lb flank steak
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • 2 medium zucchinis, sliced
  • 1 cup feta cheese
  • 1/2 cup cream cheese
  • Fresh herbs (optional, for garnish)
  • Lettuce (optional, for serving)

Instructions

  1. Whisk together balsamic vinegar, olive oil, garlic, salt, and pepper to create the marinade.
  2. Marinate the flank steak in the mixture for at least 30 minutes.
  3. Preheat the grill (or oven) for cooking.
  4. Grill the flank steak for about 4-5 minutes on each side until it reaches your desired doneness.
  5. Add zucchini slices to the grill and grill until tender.
  6. Blend the feta and cream cheese together until smooth and creamy.
  7. Slice the marinated steak and arrange it over the grilled zucchini.
  8. Drizzle with some remaining balsamic glaze and serve with whipped feta and over lettuce, garnished with fresh herbs.

Notes

For enhanced flavor, marinate steak longer and let it rest after grilling. Store leftovers in an airtight container for up to 3 days.
