Description

Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 4 cups vegetable broth
  • 1 can coconut milk
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse the red lentils under cold water until the water runs clear.
  2. In a pot, sauté the chopped onion, minced garlic, and grated ginger on medium heat until the onion is translucent.
  3. Add the curry powder, cumin, and turmeric, and stir for about 1 minute until fragrant.
  4. Toss in the rinsed red lentils and pour in the vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes until the lentils are tender.
  5. Stir in the coconut milk, season with salt to taste, and cook for an additional 5 minutes.
  6. Garnish with fresh cilantro before serving.
