Description

Ingredients

  • 2 cans butter beans, drained and rinsed
  • 1 cup sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
  2. Add the sun-dried tomatoes to the skillet and cook for a few minutes.
  3. Stir in the butter beans and pour in the heavy cream.
  4. Add the grated Parmesan cheese, oregano, basil, salt, and pepper. Stir well.
  5. Allow the dish to simmer for 10-15 minutes until the sauce thickens.
  6. Garnish with fresh parsley before serving.
