- 2 lbs ground beef (80/20 preferred for juiciness)
- 1 cup shredded Swiss cheese
- 1 cup cooked turkey bacon, chopped
- 1 cup mushrooms, sliced and sautéed
- 1 small onion, finely diced
- 2 cloves garlic, minced
- 2 large eggs
- 1/2 cup breadcrumbs
- 2 tbsp Worcestershire sauce
- Salt and pepper to taste
- Fresh parsley (optional, for garnish)
Instructions
- Preheat your oven to 375°F (190°C). Optionally, line a baking sheet with foil or use a loaf pan.
- In a skillet over medium heat, cook the turkey bacon until crispy, then remove and set aside.
- Sauté the sliced mushrooms in the bacon fat until browned and tender, then set aside.
- In a large bowl, combine the ground beef, eggs, breadcrumbs, diced onion, minced garlic, Worcestershire sauce, and season with salt and pepper. Mix gently.
- Fold in half of the shredded Swiss cheese into the meat mixture.
- Shape the mixture into a loaf on the baking sheet or in the loaf pan.
- Top the meatloaf with the remaining Swiss cheese, sautéed mushrooms, and crispy turkey bacon.
- Bake for 45–55 minutes until the internal temperature reaches 160°F (71°C).
- Let rest for about 10 minutes before slicing. Garnish with fresh parsley if desired and serve warm.
Notes
Make ahead by assembling a day in advance and refrigerating. Leftovers can be stored for up to 3 days in the fridge or frozen for up to 3 months.
