- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1 teaspoon vanilla extract
- 2 cups fresh strawberries, hulled and sliced
- 1/4 cup sugar (for strawberry filling)
- 1 tablespoon cornstarch (for strawberry filling)
- 1 teaspoon lemon juice (for strawberry filling)
- 1/2 cup rolled oats
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add in the all-purpose flour, salt, baking powder, and vanilla extract. Mix until just combined.
- Reserve 1 cup of the dough for the topping and press the remaining mixture into the bottom of the prepared baking pan.
- Combine your sliced strawberries with the 1/4 cup of sugar, cornstarch, and lemon juice. Spoon this over your crust.
- Crumble the reserved dough over the strawberries and sprinkle rolled oats on top.
- Bake for 30-35 minutes, or until the topping is golden brown.
- Allow the bars to cool in the pan before slicing them into squares. Serve and enjoy!
Notes
For cleaner slices, use a sharp knife dipped in warm water. Store leftovers in an airtight container.
