Instructions
- Preheat your oven to 375°F and prepare a couple of large baking sheets by lining them with parchment paper.
- Cream together the dark brown sugar and softened butter until light and airy—about 3 to 4 minutes.
- Stream in the molasses while mixing, then add the egg and mix until fully combined.
- Sift in the flour, salt, baking soda, and spices into the butter mixture and combine on low speed until a thick dough forms.
- Pour the white sugar into a small bowl and set it nearby, along with a small cup of water for dampening your fingers.
- Scoop about ¼ cup of dough and roll it into a ball.
- Roll the ball in the white sugar until coated and set it on the baking sheet, dampening fingers to flatten it slightly.
- Repeat this step, leaving space between cookies, about 5 to 6 per sheet.
- Bake for 10 to 15 minutes until cookies are hardened around edges.
- Let cookies cool on the baking sheet before transferring to a wire rack.
