  • ¼ Cup light molasses
  • 1 large egg
  • 2 Teaspoons baking soda
  • 1 ¼ Teaspoons ground ginger
  • 1 Teaspoon ground cinnamon
  • ¼ Teaspoon salt
  • ¼ Teaspoon ground nutmeg
  • ¼ Cup white sugar (for rolling, more if needed)

Instructions

  1. Preheat your oven to 375°F and prepare a couple of large baking sheets by lining them with parchment paper.
  2. Cream together the dark brown sugar and softened butter until light and airy—about 3 to 4 minutes.
  3. Stream in the molasses while mixing, then add the egg and mix until fully combined.
  4. Sift in the flour, salt, baking soda, and spices into the butter mixture and combine on low speed until a thick dough forms.
  5. Pour the white sugar into a small bowl and set it nearby, along with a small cup of water for dampening your fingers.
  6. Scoop about ¼ cup of dough and roll it into a ball.
  7. Roll the ball in the white sugar until coated and set it on the baking sheet, dampening fingers to flatten it slightly.
  8. Repeat this step, leaving space between cookies, about 5 to 6 per sheet.
  9. Bake for 10 to 15 minutes until cookies are hardened around edges.
  10. Let cookies cool on the baking sheet before transferring to a wire rack.
