- 3 ripe bananas
- 1/3 cup melted butter
- 1 teaspoon baking soda
- Pinch of salt
- 3/4 cup sugar
- 1 large egg, beaten
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup walnuts, chopped (optional)
Instructions
- Preheat the oven to 350°F (175°C). Grease a 4×8 inch loaf pan.
- Mash the ripe bananas with a fork until smooth.
- Stir the melted butter into the mashed bananas until well integrated.
- Mix in the baking soda and pinch of salt, ensuring they’re evenly distributed.
- Stir in the sugar, followed by the beaten egg and vanilla extract, mixing until combined.
- Fold in the flour until just combined—don’t overmix!
- Incorporate walnuts at this stage if desired, folding them in until evenly dispersed.
- Pour the batter into the prepared loaf pan, smoothing it out gently.
- Bake for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
This banana bread is best enjoyed fresh but can be stored in an airtight container for up to 3 days at room temperature or frozen for up to a month.
