Description

A healthy twist on a classic quiche with a sweet potato crust, filled with creamy goat cheese and vibrant spinach.


Ingredients

Scale
  • 2 large sweet potatoes
  • 3 large eggs
  • 1 cup goat cheese, crumbled
  • 2 cups fresh spinach, chopped
  • 1/2 cup milk (or non-dairy milk)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • Your choice of additional vegetables (e.g., bell peppers, onions, etc.)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Peel and grate the sweet potatoes. Press the grated sweet potatoes into a pie dish to form the crust, covering the bottom and sides evenly.
  3. In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
  4. Stir in the chopped spinach and crumbled goat cheese. Add any additional veggies if desired.
  5. Pour the egg mixture over the sweet potato crust in the pie dish.
  6. Bake for 30-35 minutes or until the eggs are set and the top is slightly golden.
  7. Allow to cool for a few minutes before slicing and serving.

Notes

Make-ahead friendly. Can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
