Ingredients

- 2 large sweet potatoes
- 3 large eggs
- 1 cup goat cheese, crumbled
- 2 cups fresh spinach, chopped
- 1/2 cup milk (or non-dairy milk)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon nutmeg (optional)
- Your choice of additional vegetables (e.g., bell peppers, onions, etc.)
Instructions
- Preheat your oven to 375°F (190°C).
- Peel and grate the sweet potatoes. Press the grated sweet potatoes into a pie dish to form the crust, covering the bottom and sides evenly.
- In a mixing bowl, whisk together the eggs, milk, salt, pepper, and nutmeg.
- Stir in the chopped spinach and crumbled goat cheese. Add any additional veggies if desired.
- Pour the egg mixture over the sweet potato crust in the pie dish.
- Bake for 30-35 minutes or until the eggs are set and the top is slightly golden.
- Allow to cool for a few minutes before slicing and serving.
Notes
Make-ahead friendly. Can be stored in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
