Description

A warm and cozy Spicy Jalapeno Popper Chicken Soup perfect for chilly evenings, packed with flavor and comfort.


Ingredients

  • 2 cups cooked chicken, shredded
  • 4 cups chicken broth
  • 1 cup cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1/2 cup jalapenos, chopped
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they are nice and translucent.
  2. Stir in the chopped jalapenos and cook for another 2 minutes.
  3. Add the shredded chicken and chicken broth, bringing everything to a gentle simmer.
  4. Reduce the heat and fold in the softened cream cheese and shredded cheddar cheese, stirring until melted and creamy.
  5. Season with cumin, paprika, salt, and pepper to taste.
  6. Allow to simmer for an additional 10 minutes, then serve hot.

Notes

This soup can be made ahead and stored in an airtight container for up to 4 days in the fridge or 3 months in the freezer. For added flavor, squeeze fresh lime juice over the soup before serving.
