- 2 cups cooked chicken, shredded
- 4 cups chicken broth
- 1 cup cream cheese, softened
- 1 cup shredded cheddar cheese
- 1/2 cup jalapenos, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they are nice and translucent.
- Stir in the chopped jalapenos and cook for another 2 minutes.
- Add the shredded chicken and chicken broth, bringing everything to a gentle simmer.
- Reduce the heat and fold in the softened cream cheese and shredded cheddar cheese, stirring until melted and creamy.
- Season with cumin, paprika, salt, and pepper to taste.
- Allow to simmer for an additional 10 minutes, then serve hot.
Notes
This soup can be made ahead and stored in an airtight container for up to 4 days in the fridge or 3 months in the freezer. For added flavor, squeeze fresh lime juice over the soup before serving.
