Ingredients

- 1/2 cup Peanut Butter
- 1/2 cup Butter (softened)
- 1/3 cup Brown Sugar
- 1/3 cup White Sugar
- 1 1/4 cups All-purpose Flour
- 1/2 tsp Baking Soda
- 1/2 tsp Salt
- 1/2 tsp Vanilla Extract
- 1 Egg
Instructions
- Cream together the brown sugar, white sugar, peanut butter, and softened butter until smooth and creamy.
- Beat in the egg and vanilla extract until thoroughly combined.
- Combine the all-purpose flour, baking soda, and salt in a separate bowl.
- Slowly add the dry ingredients to the wet mixture until well incorporated.
- Transfer the cookie dough to a bowl, cover, and chill for about one hour.
- Preheat your oven to 375 degrees Fahrenheit.
- Line a baking sheet with parchment paper or a silicone baking mat.
- Roll about 1-1/2 tablespoons of the chilled dough into a ball and place it on the baking sheet, pressing down with a fork.
- Bake for 9-11 minutes until the edges turn golden and the center remains soft.
- Cool on a rack slightly before enjoying!
Notes
Chill the dough for best results. Can be made ahead and stored in the fridge.
