Description

Soft and chewy peanut butter cookies that evoke warm childhood memories.


Ingredients

  • 1/2 cup Peanut Butter
  • 1/2 cup Butter (softened)
  • 1/3 cup Brown Sugar
  • 1/3 cup White Sugar
  • 1 1/4 cups All-purpose Flour
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/2 tsp Vanilla Extract
  • 1 Egg

Instructions

  1. Cream together the brown sugar, white sugar, peanut butter, and softened butter until smooth and creamy.
  2. Beat in the egg and vanilla extract until thoroughly combined.
  3. Combine the all-purpose flour, baking soda, and salt in a separate bowl.
  4. Slowly add the dry ingredients to the wet mixture until well incorporated.
  5. Transfer the cookie dough to a bowl, cover, and chill for about one hour.
  6. Preheat your oven to 375 degrees Fahrenheit.
  7. Line a baking sheet with parchment paper or a silicone baking mat.
  8. Roll about 1-1/2 tablespoons of the chilled dough into a ball and place it on the baking sheet, pressing down with a fork.
  9. Bake for 9-11 minutes until the edges turn golden and the center remains soft.
  10. Cool on a rack slightly before enjoying!

Notes

Chill the dough for best results. Can be made ahead and stored in the fridge.
