Description

A delightful recipe for soft and chewy gingerbread men cookies, perfect for holiday gatherings and family fun.


Ingredients

  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup molasses
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Royal icing for decorating

Instructions

  1. Whisk together flour, baking soda, ginger, cinnamon, cloves, and salt in a bowl until well combined.
  2. Beat the softened butter and brown sugar together until light and fluffy.
  3. Add molasses, egg, and vanilla extract, mixing until fully combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until a smooth dough forms.
  5. Chill the dough in the refrigerator for at least 60 minutes.
  6. Preheat your oven to 350°F (175°C).
  7. Roll out the chilled dough on a floured surface to about 1/4-inch thickness.
  8. Cut out cookie shapes using a gingerbread man cutter and place them on a baking sheet.
  9. Bake for 8-10 minutes until firm but slightly soft in the center.
  10. Decorate with royal icing as desired once cooled.

Notes

The dough can be made ahead of time and refrigerated for up to 3 days. Store cookies in an airtight container for up to 1 week.
