Description

A cozy comfort food delight featuring tender chicken thighs smothered in a creamy sauce with fresh spinach, crispy turkey bacon, and earthy mushrooms.


Ingredients

  • 4 chicken thighs
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
  • 4 strips turkey bacon, chopped
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil for cooking

Instructions

  1. In a large skillet, cook the turkey bacon over medium heat until crispy. Once done, remove and set aside.
  2. In the same skillet, add olive oil if necessary. Season the chicken thighs with salt and pepper and cook until golden brown on both sides, about 5-7 minutes per side. Remove the chicken and set aside.
  3. Add minced garlic and sliced mushrooms to the skillet, cooking until mushrooms are tender.
  4. Toss in the fresh spinach and cook until wilted.
  5. Pour in the chicken broth and heavy cream, stirring to combine.
  6. Return the chicken to the skillet and let it simmer for about 10-15 minutes until cooked through and sauce thickens.
  7. Stir in the crispy turkey bacon and serve hot over pasta, rice, or mashed potatoes.

Notes

You can prepare the creamy spinach and mushroom sauce ahead of time. Leftovers can be stored in an airtight container for up to 3 days.
