  • 1/4 teaspoon red pepper flakes (optional, for heat)
  • 1 tablespoon cornstarch (optional for thickening)
  • 2 tablespoons water (optional for thickening)
  • Sesame seeds (for garnish)
  • Chopped green onions (for garnish)

Instructions

  1. Lightly season the chicken thighs or breasts with salt and black pepper on both sides, ensuring they’re flavorful from the start.
  2. In a small bowl, whisk together the honey, soy sauce, ketchup, garlic, ginger, vinegar, and red pepper flakes to create the glaze.
  3. Place the seasoned chicken into the slow cooker and pour the sauce over, ensuring every piece is well coated.
  4. Cover and cook on low for 240-300 minutes or high for 120-180 minutes, until the chicken is tender and can be shredded easily.
  5. For a thicker sauce, remove the chicken and mix cornstarch with water to create a slurry, stirring it into the sauce. Simmer over medium heat until it thickens, about 2-3 minutes.
  6. Return the chicken to the slow cooker or pour the thickened sauce over the chicken, then garnish with sesame seeds and fresh green onions.
