  • 2 tablespoons Olive Oil (Extra virgin recommended)
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Smoked Paprika (Omit if preferred)
  • 1 cup Feta Cheese (Goat cheese can be substituted)
  • 2 tablespoons Honey (Maple syrup can be used)
  • 2 tablespoons Parsley (Freshly chopped)

Instructions

  1. Preheat the Oven: Begin by preheating your oven to 425°F (220°C).
  2. Slice the Sweet Potatoes: Wash and peel the sweet potatoes. Slice them into evenly thick rounds, about 1/2 inch thick.
  3. Season: In a large bowl, toss the sweet potato rounds with olive oil, salt, black pepper, and smoked paprika (if using).
  4. Bake: Arrange the seasoned sweet potato rounds in a single layer on a baking sheet lined with parchment paper. Roast for about 25-30 minutes, flipping halfway through.
  5. Top with Feta: In the last 5 minutes of roasting, sprinkle the feta cheese over the sweet potatoes.
  6. Drizzle with Honey: Once out of the oven, drizzle the sweet potatoes with honey.
  7. Garnish: Sprinkle freshly chopped parsley on top and serve warm.

Notes

You can slice the sweet potatoes a day in advance. Store in water to maintain freshness.
