- 3–4 pounds beef chuck roast
- 1 tablespoon olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 teaspoons ground cumin
- 2 teaspoons paprika
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 cup beef broth
- Juice of 2 limes
- 2–3 bay leaves
- Optional toppings: diced avocado, fresh cilantro, lime wedges, sliced radishes
Instructions
- Begin by heating the olive oil in a large skillet over medium-high heat. Sear the beef chuck roast for about 3-4 minutes on each side until it’s beautifully browned.
- Add the diced onion and minced garlic to your crockpot, creating a cozy bed for your beef.
- Sprinkle the cumin, paprika, oregano, salt, and pepper evenly over the roast.
- Pour the beef broth and lime juice around the roast.
- Toss in the bay leaves, then cover your crockpot. Set it to cook on low for 8-10 hours or high for 4-5 hours.
- Once cooked, remove the beef and shred it with two forks, mixing it back with the juices.
- Serve hot with tortillas, rice, or in a bowl with your favorite toppings.
