  • 2 teaspoons paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • Juice of 2 limes
  • 23 bay leaves
  • Optional toppings: diced avocado, fresh cilantro, lime wedges, sliced radishes

Instructions

  1. Begin by heating the olive oil in a large skillet over medium-high heat. Sear the beef chuck roast for about 3-4 minutes on each side until it’s beautifully browned.
  2. Add the diced onion and minced garlic to your crockpot, creating a cozy bed for your beef.
  3. Sprinkle the cumin, paprika, oregano, salt, and pepper evenly over the roast.
  4. Pour the beef broth and lime juice around the roast.
  5. Toss in the bay leaves, then cover your crockpot. Set it to cook on low for 8-10 hours or high for 4-5 hours.
  6. Once cooked, remove the beef and shred it with two forks, mixing it back with the juices.
