Description

A simple and delightful peanut butter cookie recipe that evokes nostalgia and warmth.

Ingredients

Scale
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking soda
  • Sea salt, for sprinkling

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix together the peanut butter, sugar, egg, vanilla extract, and baking soda until well combined.
  3. Scoop tablespoon-sized portions of the dough and roll them into balls.
  4. Place the balls on a baking sheet lined with parchment paper, leaving room for spreading.
  5. Press each ball down slightly with a fork to create a crisscross pattern.
  6. Sprinkle a little sea salt on top of each cookie.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  8. Let them cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

You can prepare the dough in advance and refrigerate it for up to a week. Feel free to try almond or cashew butter as substitutes.
