- 1 cup sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- Sea salt, for sprinkling
Instructions
- Preheat your oven to 350°F (175°C).
- Mix together the peanut butter, sugar, egg, vanilla extract, and baking soda until well combined.
- Scoop tablespoon-sized portions of the dough and roll them into balls.
- Place the balls on a baking sheet lined with parchment paper, leaving room for spreading.
- Press each ball down slightly with a fork to create a crisscross pattern.
- Sprinkle a little sea salt on top of each cookie.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Let them cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
You can prepare the dough in advance and refrigerate it for up to a week. Feel free to try almond or cashew butter as substitutes.
