- 12–16 ounces green beans
- 3–4 cloves garlic, minced
- 3 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Herbs (optional, such as rosemary or thyme)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and cut the potatoes into bite-sized pieces.
- Trim the ends of the green beans, snapping them to remove tough areas.
- In a large bowl, combine potatoes and green beans with minced garlic, olive oil, salt, pepper, and herbs if using. Toss to coat.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the oven for about 25-30 minutes, stirring halfway through, until the potatoes are golden and tender.
- Serve hot as a side dish.
