Ingredients

  • 34 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Herbs (optional, such as rosemary or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and cut the potatoes into bite-sized pieces.
  3. Trim the ends of the green beans, snapping them to remove tough areas.
  4. In a large bowl, combine potatoes and green beans with minced garlic, olive oil, salt, pepper, and herbs if using. Toss to coat.
  5. Spread the mixture on a baking sheet in a single layer.
  6. Roast in the oven for about 25-30 minutes, stirring halfway through, until the potatoes are golden and tender.
