Description

A cozy side dish featuring golden potatoes and tender green beans, seasoned with fragrant garlic and herbs.


Ingredients

  • 2 lbs of Yukon gold or red potatoes
  • 1 lb of fresh green beans
  • 4 cloves garlic, minced
  • 3 tablespoons olive oil
  • Salt, to taste
  • Pepper, to taste
  • Seasonings (such as thyme and rosemary), to taste

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and chop the potatoes into bite-sized pieces.
  3. Trim the ends of the green beans.
  4. Combine the potatoes and green beans with minced garlic, olive oil, salt, pepper, and seasonings in a large bowl.
  5. Spread the mixture on a baking sheet in a single layer.
  6. Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
  7. Serve hot and enjoy!
