- 2 lbs of Yukon gold or red potatoes
- 1 lb of fresh green beans
- 4 cloves garlic, minced
- 3 tablespoons olive oil
- Salt, to taste
- Pepper, to taste
- Seasonings (such as thyme and rosemary), to taste
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and chop the potatoes into bite-sized pieces.
- Trim the ends of the green beans.
- Combine the potatoes and green beans with minced garlic, olive oil, salt, pepper, and seasonings in a large bowl.
- Spread the mixture on a baking sheet in a single layer.
- Roast in the preheated oven for about 25-30 minutes, stirring halfway through.
- Serve hot and enjoy!
