Description

A comforting one-pan dish featuring kielbasa and colorful veggies, infused with sweet honey and savory garlic for a delicious family meal.


Ingredients

Scale
  • 1 pound Kielbasa
  • 2 tablespoons Honey
  • 3 cloves Garlic (minced)
  • 2 tablespoons Soy Sauce
  • 1 each Bell Peppers (red & yellow)
  • 1 cup Baby Carrots
  • 1 pound Baby Potatoes
  • 2 tablespoons Olive Oil
  • 2 tablespoons Fresh Parsley or Green Onions

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the honey, minced garlic, and soy sauce in a mixing bowl.
  3. Place the sliced kielbasa on a large rimmed baking sheet and drizzle with olive oil, then pour over your honey garlic mixture.
  4. Add in the bell pepper slices, baby carrots, and halved baby potatoes to the pan.
  5. Spread everything out evenly on the baking sheet.
  6. Bake in the oven for 25-30 minutes, stirring halfway through.
  7. Once done, drizzle with more honey and sprinkle with parsley or green onions.

Notes

Prep ahead by chopping the veggies and kielbasa the night before. Store leftovers in an airtight container for up to 3-4 days.
