Description

Delightful mini cheesecakes that bring back warm memories and are perfect for any occasion.


Ingredients

Scale
  • 1 cup graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1/2 cup sour cream

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. Combine graham cracker crumbs, 1/4 cup sugar, and melted butter in a bowl. Mix until well combined.
  3. Press the mixture into the bottom of a muffin tin lined with cupcake liners to form the crust.
  4. Beat the cream cheese, 1/2 cup sugar, and vanilla extract in another bowl until smooth.
  5. Add eggs one at a time, mixing well after each addition.
  6. Stir in sour cream until blended.
  7. Pour the cream cheese mixture over the crust in the muffin tin.
  8. Bake for 15-20 minutes, until just set.
  9. Allow to cool, then refrigerate for at least 2 hours before serving.

Notes

Customize with toppings such as fruit, chocolate sauce, or whipped cream. For a lighter version, use reduced-fat ingredients.
