- 1 Large Head of Cauliflower
- 1 Tablespoon Mild Tasting Oil
- 1/4 Cup Mayonnaise
- 1 Teaspoon Chili Powder
- 1/2 Cup Cotija Cheese (crumbled)
- 1/3 Cup Fresh Cilantro (chopped)
- Lime (wedges)
Instructions
- Preheat your grill to medium heat.
- Remove the leaves and the bottom of the stem from the cauliflower.
- Slice the cauliflower into four thick steaks.
- Brush each side with mild oil.
- Cover and grill for 5-6 minutes until edges begin to char.
- Flip the steaks and grill the other side for another 5-6 minutes.
- Check tenderness; grill over indirect heat for another 10 minutes if needed.
- Brush cooked steaks with mayonnaise.
- Sprinkle with chili powder, Cotija cheese, and cilantro.
- Squeeze fresh lime juice over the top and enjoy!
Notes
You can prepare the cauliflower steaks in advance and marinate them in oil and spices to enhance flavor. Leftovers can be stored in an airtight container for up to 3 days.
