- 2 tablespoons olive oil
- 1 onion, finely chopped
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 2 cups vegetable broth or water
- Salt to taste
- 1/4 cup toasted pine nuts
Instructions
- Heat olive oil in a medium pan over medium heat. Add the chopped onion and sauté until softened and translucent.
- Stir in the turmeric and cumin, sauté for another minute until fragrant.
- Add the rice, stirring gently to coat the grains.
- Pour in the vegetable broth or water and season with salt.
- Bring to a boil, reduce heat to low, cover, and let simmer for 15-20 minutes.
- Fluff the rice with a fork and stir in the toasted pine nuts before serving.
