Description

A vibrant Mediterranean Steak Bowl that combines flavors of grilled sirloin, fresh veggies, and a creamy tzatziki sauce for a cozy dinner.


Ingredients

  • 1 lb sirloin steak (about 1-inch thick)
  • 3 tbsp olive oil (for marinating)
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • Salt & pepper (to taste)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp lemon juice (fresh)
  • 1 tsp honey (optional)
  • 1 garlic clove (minced)
  • ½ tsp dried oregano
  • Salt & pepper (to taste)

Instructions

  1. In a bowl, mix together the marinade ingredients: 3 tablespoons of olive oil, minced garlic, fresh lemon juice, dried oregano, dried thyme, salt, and pepper.
  2. Coat the sirloin steak thoroughly in the marinade, and let it sit for at least 30 minutes, or up to 4 hours in the refrigerator.
  3. While your steak is marinating, prepare your tzatziki by mixing Greek yogurt, grated cucumber, fresh lemon juice, minced garlic, fresh dill, and a pinch of salt and pepper.
  4. For the vinaigrette, whisk together the olive oil, fresh lemon juice, honey (if using), minced garlic, oregano, and a dash of salt and pepper.
  5. Heat a skillet over medium-high heat and sear your marinated steak for about 4–5 minutes on each side.
  6. Once cooked, let the steak rest for a few minutes before slicing thinly against the grain.
  7. Layer your bowl with a base of cooked grains, sliced steak, cherry tomatoes, diced cucumber, red onion, kalamata olives, and feta cheese.
  8. Drizzle with tzatziki and vinaigrette, and sprinkle with freshly chopped herbs.

Notes

Leftovers can be stored in an airtight container in the fridge for up to 3 days. Reheat before serving.
