Ingredients

- 4 boneless chicken breasts
- 2 tbsp olive oil
- Juice & zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp oregano
- 1 tsp thyme
- Salt & pepper to taste
- 1 can artichoke hearts, quartered
- 1/2 cup green olives, sliced
- 1/2 cup cherry tomatoes, halved
- Fresh parsley for garnish
Instructions
- In a bowl, marinate the chicken breasts with lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper for 30 minutes.
- Heat a skillet over medium-high heat and sear the marinated chicken for 4–5 minutes on each side, until golden brown.
- Add the quartered artichokes, sliced green olives, and halved cherry tomatoes to the skillet, scattering them around the chicken.
- Transfer everything to a baking dish and bake it in a preheated oven at 375°F for 25–30 minutes, until the chicken is cooked through and the veggies are tender.
- Garnish with freshly chopped parsley before serving.
Notes
For more intense flavor, marinate the chicken the night before. Leftovers can be stored in an airtight container in the fridge for up to three days.
