Ingredients

- 4 boneless chicken breasts
- 2 tbsp olive oil
- Juice & zest of 1 lemon
- 3 garlic cloves, minced
- 1 tsp oregano
- 1 tsp thyme
- Salt & pepper, to taste
- 1 can artichoke hearts, quartered
- 1/2 cup green olives, sliced
- 1/2 cup cherry tomatoes, halved
- Fresh parsley, for garnish
Instructions
- In a large bowl, combine lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper. Add chicken and marinate for 30 minutes.
- Heat a large skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown.
- Add quartered artichokes, sliced olives, and halved tomatoes to the skillet, nestling alongside the chicken.
- Preheat oven to 375°F. Transfer skillet to the oven and bake for 25-30 minutes until chicken is cooked through.
- Remove from oven, let rest, and garnish with freshly chopped parsley before serving.
Notes
Feel free to swap green olives for kalamata olives or add feta cheese for extra flavor.
