Description

A cozy and flavorful Mediterranean chicken dish that’s easy to prepare for weeknight dinners.


Ingredients

Scale
  • 4 boneless chicken breasts
  • 2 tbsp olive oil
  • Juice & zest of 1 lemon
  • 3 garlic cloves, minced
  • 1 tsp oregano
  • 1 tsp thyme
  • Salt & pepper, to taste
  • 1 can artichoke hearts, quartered
  • 1/2 cup green olives, sliced
  • 1/2 cup cherry tomatoes, halved
  • Fresh parsley, for garnish

Instructions

  1. In a large bowl, combine lemon juice, olive oil, minced garlic, oregano, thyme, salt, and pepper. Add chicken and marinate for 30 minutes.
  2. Heat a large skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown.
  3. Add quartered artichokes, sliced olives, and halved tomatoes to the skillet, nestling alongside the chicken.
  4. Preheat oven to 375°F. Transfer skillet to the oven and bake for 25-30 minutes until chicken is cooked through.
  5. Remove from oven, let rest, and garnish with freshly chopped parsley before serving.

Notes

Feel free to swap green olives for kalamata olives or add feta cheese for extra flavor.
