Ingredients

- 1/4 cup feta cheese, crumbled
- 1 medium tomato, sliced
- 1 cup fresh spinach
- 2 slices of whole grain bread
- Salt and pepper to taste
- Olive oil for cooking
Instructions
- Heat a small amount of olive oil in a skillet over medium heat.
- Crack the eggs into the skillet and season with salt and pepper, cooking for about 3-4 minutes until whites are set.
- Toast the whole grain bread until crispy.
- On one slice of toast, layer spinach, eggs, tomato, and feta cheese.
- Top with the second slice of toast, slice in half, and serve immediately.
Notes
Prep veggies the night before for a quicker breakfast. Feel free to substitute ingredients such as using goat cheese instead of feta.
