Description

A warm, comforting fusion of tender potatoes and zesty toppings, perfect for family dinners.


Ingredients

  • 4 medium russet potatoes
  • 1 pound ground beef (or turkey)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper, to taste
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream (or Greek yogurt)
  • 1/2 cup diced green onions
  • 1 cup chopped tomatoes
  • Optional toppings: diced avocado, jalapeños, salsa, or fresh cilantro

Instructions

  1. Preheat your oven to 400°F (200°C). Pierce each potato several times with a fork and place them on a baking sheet. Bake for about 45-60 minutes or until tender when pierced with a fork. Allow to cool slightly.
  2. Brown the ground beef in a skillet over medium heat. Add chili powder, cumin, garlic powder, onion powder, salt, and pepper, stirring until combined. Cook for 5-7 minutes or until cooked through.
  3. Chop green onions and tomatoes, and prepare any additional toppings.
  4. Once potatoes are cool enough to handle, slice them in half lengthwise and fluff the insides with a fork.
  5. Layer with ground beef over the fluffed potato, sprinkle on cheddar cheese, then top with sour cream, diced tomatoes, and green onions.
  6. Serve with optional toppings for personalization.

Notes

You can prepare the filling and toppings in advance. Just bake the potatoes fresh for serving.
