Ingredients

- 4 medium russet potatoes
- 1 pound ground beef (or turkey)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 1 cup shredded cheddar cheese
- 1 cup sour cream (or Greek yogurt)
- 1/2 cup diced green onions
- 1 cup chopped tomatoes
- Optional toppings: diced avocado, jalapeños, salsa, or fresh cilantro
Instructions
- Preheat your oven to 400°F (200°C). Pierce each potato several times with a fork and place them on a baking sheet. Bake for about 45-60 minutes or until tender when pierced with a fork. Allow to cool slightly.
- Brown the ground beef in a skillet over medium heat. Add chili powder, cumin, garlic powder, onion powder, salt, and pepper, stirring until combined. Cook for 5-7 minutes or until cooked through.
- Chop green onions and tomatoes, and prepare any additional toppings.
- Once potatoes are cool enough to handle, slice them in half lengthwise and fluff the insides with a fork.
- Layer with ground beef over the fluffed potato, sprinkle on cheddar cheese, then top with sour cream, diced tomatoes, and green onions.
- Serve with optional toppings for personalization.
Notes
You can prepare the filling and toppings in advance. Just bake the potatoes fresh for serving.
