Description

Ingredients

  • 1 ripe avocado
  • 1 medium cucumber, thinly sliced
  • 1/2 cup fresh leafy greens (lettuce, spinach, or arugula)
  • 1/4 cup cherry tomatoes, halved (optional)
  • 2 tbsp red onion, thinly sliced
  • 1 tbsp fresh herbs (dill, basil, or cilantro), chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 1 tsp olive oil or favorite sandwich spread (optional)

Instructions

  1. If desired, lightly toast the bread slices for a cozy crunch.
  2. In a bowl, mash the ripe avocado until creamy, then mix in the lemon juice, salt, and pepper to taste.
  3. Spread the mashed avocado generously over one side of each bread slice.
